What a tally app does well

A running list of who paid for dinner is useful. If the group already planned the trip somewhere else, and you only need to settle after, a calculator that stays a calculator is enough.

Where an IOU app stops

A group trip is not a restaurant bill. Someone still has to pick the dates, hold the itinerary, name the meeting point, and get eight people to pay park fees before Saturday.

Splitwise does not plan the trip, show who has a seat, or collect M-Pesa into the trip pool. The money stays as a balance to settle later, which is how trips stall in the chat.
